Assistant Baker

About the role

The Assistant Baker supports the lead baker in delivering fresh, high‑quality baked goods aboard a Norwegian Cruise Line vessel. You will work closely with the culinary team, ensuring smooth production and adherence to safety and sanitation standards.

Key responsibilities

• Prepare all food items fresh, maintaining the highest quality and strict portion specifications.
• Maintain an organized production flow, adapting to menu changes and forecast updates.
• Procure, store, scale, and prepare ingredients according to safety and storage procedures.
• Assist the baker with waste‑log documentation to improve forecasting and production models.
• Conduct daily equipment walk‑throughs, ensuring repairs, safety, and sanitation issues are resolved.
• Ensure proper labeling, rotation, and storage of all food items and manage disposal of leftovers.
• Participate in daily focus meetings to align team communication and expectations.
• Support inventory management and uphold USPH/FDA standards.

Required profile

• Minimum one year of experience in a bake shop performing all baking techniques.
• High school diploma or equivalent and STCW training from an accredited institution.
• Intermediate English verbal and written skills.
• Ability to work 7 days a week, live in close quarters, and maintain a professional appearance.
• Proactive, team‑oriented, and passionate about hospitality.

Required skills

• Baking techniques and knowledge of dough types, leavening agents, and flavorings.
• Understanding of starches, fats, sugars, liquids, eggs, and salts.
• Basic to intermediate ability to create bread displays and showpieces.
• Inventory and waste‑log documentation.
• Compliance with safety, environmental protection, and sanitation policies.
